"Expensive... but worth it" 2010-08-16

I waited a while and wanted to use these for a few weeks before really making an informed review. I was concerned after having not cooked on "quality" cookware how much of a difference I would notice or if it would even make that much of a difference in my cooking at all. It did. They wont obviously just make you a great cook just by using them, but once you do get used to them they make a huge difference over cheaper sets. Food cooks evenly, they heat up fast, they hold heat really well, and there are no hot spots that Ive been able to tell. The only negative that I would consider is the handles for the lids does get pretty hot if you're braising, boiling, or doing anything where steam/heat gets to the lid. Simple solution for me was just to keep a towel close by (which I normally do anyways) and Ive gotten in the habit of using that to open the pots that I know have been on the stove for a while. Recap, well worth the investment IMO.

My husband and I are slowly replacing our old cookware with investment pieces. We have wanted to try some All-Clad cookware for a long time and so far, it is exceeding our expectations. The pans heat so much more evenly than anything else we own and they really haven't proven to be a pain to clean (which we were sort of expecting). We heeded the advice of the instructions and the reviews from others and keep the heat lower than we normally would..... cook like a dream. I find the weight of the pans to be really nice. I sort of thought that the lids would be heavier. They are very light, but provide a really good seal. Like some of the other reviewers, I bought some Bar Keeper's Friend, but have only had to use it once. I really like this 5 piece set, too because we didn't get a bunch of extra stuff that we really didn't want... and the price was exceptional (black friday sale).

Le Creuset is taking a shot at the high-end stainless cookware market with an exceptional product. I got a set of these from a major department store. The quality is excellent. The saucepans are heavy and similar to the All-Clad, with 3-ply layering that isn't just on the bottom, but all the way up the sides. The rims are designed for pouring without the contents dribbling down the side of the pan. The handle is comfortable, although the pan is heavy. The lids are snug fitting and the bottoms are nice and even - perfect for induction cooking or any smooth-top surface. They are dishwasher safe, but I'm going to hand wash them, at least until the novelty wears off :-) I have only used them a few times so I can't say how well they hold up, but the well respected company offers a lifetime warranty. They're beautiful and a pleasure to cook with. I would recommend keeping an eye out for sales. I got my set on close-out at 50% off. I think Le Creuset is having trouble breaking into the high-end cookware market so you might get these for a steal.

I looked at different brands of stainless cookware before purchasing my LeCreuset and here are some of the features the others don't have that sold me on the LeCreuset. The pans nest evenly inside one another. The design of the handle allows the lid to fit into the handle. These pans are heavy - the extra handle is a big bonus when you have a full heavy pan to lift or move. I love the stainless lids that come with this cookware. The steamer insert (purchased separately) fits THREE different sizes of pans, comes with it's own glass lid, too. All of the pots have measurements on the inside walls for easy measuring (especially when reducing liquid). This cookware, heats and cooks everything very evenly. These pans are very easy to use and clean. I have experienced some bluish discoloration that I am not happy with, but I am assured that it is only cosmetic and does not adversely affect the cookware. This is great cookware, designed to last a lifetime of good hard use in the kitchen. I would recommend it to anyone who is looking for excellent quality clad stainless cookware.

I really liked the idea of made in the USA, what I didn't like was the way the covers were made. When washing the covers, the water will collect on the inside, in between the glass and metal part (that goes around the glass)of the cover, you need to find the seam to let the water drip out, it usually sits in my dishrack overnight. When you're using the covers while cooking, it also collects in this area of the cover and you can't "wash" it out, if you're cooking with oil, it'll stay there. Suggest not to use HIGH heat on these, they will discolor the bottom of the stainless steel pans/pots, be careful when boiling water to cook pasta. Be sure to regularly "season" the insides of the stainless steel.

I've had these pots and pans for about 8 months now and I love them! I use several each day so they have been through a lot of use these past months. They are sturdy and well made making them impossible to dent. The brushed steel makes them impossible to smudge. The heavy bottoms keep them from tipping over. The handles stay cool during stove top cooking. I love the fact that you can throw any of them in the oven. The clear lids are great for monitoring your food without lifting the lid. Since there are measuring lines on the inside of each pot, I don't have to measure out water with a separate cup. I just use the lines! I also like that only the skillets are nonstick. Only starchy foods like potatoes and pasta, and a small handful of other foods need to be fried on nonstick. All other vegetables develop a much better flavor if cooked without the coating and in some oil. These pots and pans do stain, especially ones that have been put in the oven, but this doesn't really bother me. They're not for display. They're for cooking. Also, the nonstick coating is not as good as it was the first time we used the skillets. However, I prefer them the way the are now. Oil can actually coat the skillet instead slipping all over the place. All in all, I am very pleased with this set!

I received an Oneida cookware set for Christmas that is comprable in price to this set. However, it was made in China, and being a new home owner, I have had the unfortunate pleasure of purchasing many "made in China" products from various home improvement warehouses in the past several months. All I can say is that 99% of the Chinese made products I've dealt with, specifically those related to the home and home improvement, have been a significant disappointment and of sub-par quality. I decided that it was time to start seeking out "made in USA" products -- and that's what led me to this set of cookware. After doing some extensive research, this seems to be the only readily available "made in USA" set out there in this price range. My girlfriend and I have now prepared several meals using this set, and we are both pleased. The pots and pans feel substantially better made than the Chinese-made Oneida set I was originally given, and I can only imagine that they perform better. They conduct heat incredibly well. Just run a pot under hot water for a few seconds, and the pan is almost instantly the same temperature of the water. Furthermore, the cookware can be used on any kind of cooking surface -- including induction, which is a big plus for me because I intend on upgrading to an induction cooktop in the future. All in all, I could not ask for a better value. Now if only I could find a good value-priced set of flatware made in America!

After years of cooking with my cast iron(which I love)and flimsy non-stick pot/pans(which I hated),and hand me down mismatched piece(which I also hated lol) I finally decided to treat myself to a new complete set. I had no idea what to purchase. There are so many choices out there;non-stick,hard anodized,stainless steel,cooper,etc. I searched the web for facts,preferences,recommendations,and reviews. I looked&looked for months. Finally I decided I wanted to give stainless steel a try. I happened across this American Kitchen set. It seemed to have everything I was looking for. The fact that it's made in America was a huge plus. After a few weeks of procrastinating(I wasn't sure I wanted to spend $199 on a set)I decided to take the plunge. I found this set,new&unused,on another site. I got it for $100 with free shipping! I figured if it didn't hold up I'd only be out a few dollars. I was pleased from the moment I unpacked the pieces. They are very attractive. I love the brushed exterior on the pieces. The satin exterior looks very professional and doesn't show scratches as easily as I imagine a mirror finish would. The next thing that grabbed me was the weight of the pieces. They have a nice heft to them without being too heavy to handle. I had heard horror stories about any and everything sticking to stainless steel. Not having a dishwasher I was prepared to spend hours soaking and scrubbing my pans. Having used cast iron for the majority of my cooking it took me a couple of times to remember to use a lower heat setting on my gas stove top with this set. The first time cooked chicken was a complete disaster. It stuck like crazy. After following the directions included(which I should have read in the first place)and following advice about preheating the pieces for about three minutes THEN adding oil and letting that heat for an additional two minutes I didn't have a problem the next time I tried cooking something. Nothing stuck to the pieces with the stainless steel interior. I love the fact that I can use a lower heat when cooking. They all retain heat very nicely. I've cooked chili,soups,and sauces in the stock pot and find the leftovers are still warm when I go back for seconds(sometimes as long as an hour later). I love being able to make an omelette (without using any oil or butter) and have it slide right out of the pan! Other pluses to buying this set(aside from quality&being made in the USA)is customer support. I've emailed with questions and received a response in 24 hrs or less! The warranty is great too. I do recommend,as others have said,you invest in Bar Keeper's Friend to keep the pans/pots looking their very best. I've noticed some spotting when making pasta and such. Nothing too bad. Nothing that affects the use of the pieces but if you don't like spot/discolorations(I have some "Monk-isms" about things like that)a light sprinkling of BK'sF takes the spots right out. I've had the set since August and all the pieces look like new. Two other things about maitenance. First every two-three months you should 'season' the non-stick skillets with a little cooking oil. Add a tsp or two and use a soft paper towel to wipe. Second,I've heard some say they use non-stick spray in their pots/pans. From what I've read&been told that's not a good idea with any stainless steel pieces. That apparently causes a build up over time which damages the interior . I recommend this set to anyone looking for dependable quality cookware. It's a wonderful starter set and makes me enjoy cooking all the more! I've heard people say that cooking with a good set makes all the difference. I never believed that until I bought this cookware. Since purchasing this I find that I look foward to getting in the kithcen. I don't think you'll be disappointed with the American Kitchen set. I love mine and am looking forward to having it for years to come. I'll be buying more pieces!

"Broken Handle In Packaging - Great Amazon Customer Service!" 2010-08-03

I received my much awaited 5-piece pressure cooker set today! I was so excited to make my own hummus & falafel. I began the soaking process of the beans, yesterday, so that I would be ready to cook when UPS arrived with my package! To my great dismay, I opened the 8-quart cooker box, which is boxed separately from the glass lid, and the 4-qt cooker, and found that the 8-qt black handle was broken. Three pieces of the handle, where it meets the steel, were in the bottom of the box. Luckily, when I called Amazon, they told me that they would send me a new Fagor 5-pc Pressure Cooker set, to arrive in 2 days. The customer service rep also stated that I would receive a shipping label, at no cost to me, in my email, within 5 minutes. I could print the shipping label and send back the broken product, returning it within 30 days. Great! I am so happy that this turned out well. Though, my family and I are greatly disappointed not to get to make hummus & falafel, tonight. The handles are hollow, and seem not well made. Though, the steel is of high quality and the set is a great price. Notice, I have not handled any other pressure cooker to compare the strength/quality of the handles. When I purchased this set for myself, I also purchased a set that Amazon sent to a friend. I would buy this again for myself & intend to purchase a 3rd set for some friends. I made a packaging suggestion where one has the online opportunity to do so with Amazon. I hope that this helps you in your decision. Hence, my 4 stars.

I am very frustrated with the customer service I've been shown. I initially contacted Fagor in March 2010 regarding a problem with my pressure cooker which I had been using for 1 month. I was told that they would replace the handle. More than 3 months later I have nothing. No fixed handle, therefore no pressure cooker. At least someone could have had the courtesy to contact me and let me know that I would not be receiving anything. Instead, when I emailed to inquire as to when the handle would arrive, I was told "next week". It's very hard to believe that Fagor is unable to get a replacement handle. I could have ordered one off the website myself, but I trusted that the company would remedy the situation., as they promised Now I'm stuck because I spent quite a bit of money on a pressure cooker that I thought was high quality, and I've been left with a regular sauce pan for months. How long must this go on?

I think this is the same product as the Fagor Rapida set sold by Costco. It works great, so I won't do a complete review. I want to share what I learned about using it to steam. After reading for hours on the web about pressure cooking grains and experimenting, I discovered that steaming is the most reliable and best tasting way to cook grains. However this requires an inner bowl to hold the grains above the water, and it's very difficult to find one that fits inside, holds a decent volume, and most importantly can be removed without burning your hands on the pressure cooker walls. After looking high and low, I realized that I already had the perfect inner bowl for steaming: The 0.7L rectangular Glasslock brand storage container, sold as part of a larger set at Costco as well. I can actually place two of these on top of each other, inside the pasta steamer basket that comes with the Fagor Rapida, to pressure cook two different items at the same time. Because of the rectangular shape, these Glasslock containers can be gripped on the sides with a potholder and lifted out without burning your fingers. Perfect! After realizing that my sealing problems were caused by failure to follow the extremely poor directions included with the Fagor, I'm in pressure cooking heaven.

I know squat about pressure cookers but hubby wanted one. However, he objected to the $250 price tag his friends paid. This is killer. Short ribs in 30 minutes. 2 pot sizes with interchangeable lids (one glass & one pressure cooker). Has steamer basket (only fits larger pot). GREAT gift for someone that is just going out on their own...HIGHLY recommend! Can't quite understand why you'd buy the more expensive Fagor 5-in-one.

The set 4 pots are avertised as 20 quart, 16 quart, 12 quart and 8 quart. The 20 quart pot will only hold 16 quarts. The 16 quart pot will only hold 13 quarts. The 12 quart pot will only hold 10 quarts. The 8 quart pot will only hold 6 quarts. The seller and manufactureer are misleading the buyer with false claims. I recommend that you buy the pots somewhere else.

I got these for about $15 shipped. The price has since gone up but they are worth the cheaper price... they are very thin as others have stated but in the end they get the job done. I am having a party this weekend and we were making spaghetti sauce in the pot, the thin metal heats up much faster than other pots and the sauce burned and had to be thrown away. Remember this and use caution when cooking with them! They are very compact, everything fits inside one another and I recommend them if the price ever comes back down.

Where else could you get 4 stainless steel stock pots with lids for $14.00? They are not the finest quality available but they get the job done. The 20 quart lid also fits some other cookware. I think these may be factory seconds as they have some minor dents and dings. Overall, for the money, they are a great bargain.

I got these for around $17.00 and they were well worth the price I paid. The entire set stacks together pretty well, with the exception of the largest stock pot lid. If you need these types of pots, give them a try. My only slight disappointment was that I had to really scrub them to get the water deposits off them after I had used one to boil corn on the cob.

"The Best Clad Cookware" 2010-07-14

After doing rigorous comparison shopping, including looking at commercial clad cookware like Vollrath Tribute, I consider the new Le Creuset cookware to be the best available, hands down. The lids are thicker, the pot bodies are heavier, and the handles are more comfortable. These pots and pans put brands like All Clad to shame. Yes, they are made in China. Only All Clad, which now makes their handles and lids off-shore too (they don't tell you where) and Vollrath are made in the US. All Clad is no better than Cuisinart (which would be my second choice, and a lot cheaper) or Calphalon, now discontinued, in the clad cookware category. And All Clad is ridiculously expensive, which in my opinion is completely unjustifiable, not to mention that their handles are as uncomfortable as they come. If I didn't care about looks I would have gone with Vollrath, but the Le Creuset are very attractive (for pots and pans). The new handles are thick and easy to grasp. The finish is impeccable.

I bought this set at a mall store at 1/2 price. I have to say it's a dream to cook with. In renovating our kitchen, one thing I definitely wanted was an induction cooktop so I needed new cookware that works with induction. I went to the store looking for All-Clad, but this caught my eye. I read some reviews, but it seemed everyone was hung up on the fact that it wasn't "All-Clad" - the be-all and end-all of cookware. In fact, most of the reviewers had never tried it or even seen it in a store, but that didn't stop them from writing negative reviews. Because of all the negatives, I was unsure until I actually cooked with this cookware but after I did, I was sold. The great thing about it is it isn't All-Clad so you can get a good price for it. Le Creuset is trying to compete with All-Clad and I'm convinced they have a product good enough to do it.

I just got back from returning this 12 pc. set of Le Creuset stainless steel cookware to Bloomingdale's as I'd purchased it online, much cheaper than here on Amazon. However, it did me no good because I couldn't keep it. I searched in stores and online looking for a set of cookware which is NOT made in China and is reasonably priced (around $250-$400.) I ordered the Le Creuset assuming it was made in France, but when it arrived, I looked everywhere on the box and on the brochure included inside to see where it was made, but to no avail. I eventually called Le Creuset and was informed that it was not made in France, but in CHINA! She assured me they have two on site quality control supervisors, but HEELLLLOOOOO...its STILL made in China with Chinese products!!! I refuse to cook all of our meals in pots made in a country where they put formaldehyde and lead in things like baby formula and children's toys! I am saying NO THANK YOU to as many chinese made products as possible to send a message. I would love to buy All-Clad as its made here in the US, however a similar set would cost well over $1000 and I cannot afford that either. I would give this product a negative if I could as I really feel Le Creuset is trying to be sneaky and sly and pass this off as a French made product-why not place where it is made on the outside of the box if this is not true? I'm now on the search for another set of non-Chinese cookware...wish me luck!

Great Value for the money. Yes they are thin, Yes the rivets are poorly done, Yes they do not hold what they lead you to believe (More on that later), Yes they were dirty with industrial dirt, but they work great for cheese making. The heating delay is very minimal due to the thin metal, great benefit for controlling temps. I have a heavy pot for the water and use these for the milk. On the Volume discrepancy, I found that all the pots held less than advertised. Seemed like a conversion thing from the manufacture. Did a little digging and found that a United Kingdom (UK) Gallon is 20% less than a US Gallon. Funny that all the pots are about 20% undersized. Probably has to do with India being a Commonwealth country, and then transferred the tools and specs to a lower cost manufacturing country. Globalization. They were delivered in record time, three days from order to door. Fast Free Shipping. All in all I went into this with Eyes Wide Open and got what I expected. These are a great Value Buy for working pots, they are not fancy pots to be put on display.

Used smallest pot in set, boiled water, got food out and left the water in pot while it cooled during super. Come back to clean and looked like someone tried to sit on it because the sides were cut at the top and it formed an oval. It still had the water in it, thus it was not someone sitting on it.

I read some of the reviews and was a bit concerned, but tried it anyway. First, I would concur that these pots are lightweight and the metal is thin, but they are still fine for soups, stews, making beer or cheese etc. I wouldn't use them to make a roux or bechamel, but I didn't expect to use them for anything like that. For boiling primarily thin liquids, they are more than fine.
Second, I was concerned about the volume issues, since a number of buyers had said the reported volumes of the pots were considerably less than stated. I checked 2 of the 4 pots and they are spot on within a reasonable measurement. Perhaps this was a problem in the past that has now been corrected.
Third, others had reported leaks at the handles where they are riveted on. The two pots that I tested for volume did not leak at the handles.
So, overall, these are a very good value for the money. If you want very heavy duty pots that you can use to reduce cream, these are not for you. Then again, you shouldn't expect that at this price level. I plan to use mine to make cheese, and it will be perfect for heating 2 gallons of milk at a time in a double boiler arrangement. I'm sure we'll use them for soups as well.

Though I still find it to be a decent, affordable kitchen set, it was not the set pictured. I find the product to be of average quality. The stainless is a little thin, and flimsy. The handles are spot welded, and feel somewhat weak, so as long as these are taken care of, I expect a decent life span out of them. Not bad for [...].

"As Claphalon advertises" 2010-08-08

I purchased a 10 pc. Claphalon Contemporary cookware set about 6 months ago. I really have come to like my new cookware. Previously I had used a hand-me-down Revere set, and wanted a heavier-bottomed, purchased-new-by-me set. I did a fair amount of research, and based mostly on Consumer Reports' evaluations I chose Calphalon. I specifically chose the Contemporary line because of the glass see-though lids, the lovely design, and the lower weight of individual pieces compared to other Calphalon product lines. At first I didn't like how large and heavy the pots and pans were compared to my Revereware. I'm used to the extra heft now-- the extra long handles on the Calphalon help with balancing the weight of pot and contents. I also didn't like the fact that the Calphalon handles were so long that I had to completely rearrange my cabinets to provide a place for the new set. To aid in storing, I found online a do-it-yourself rack (made from an inexpensive metal hand towel rack) for the lids that I attached to a cabinet door. This rack is very handy, and allows me to stack the pots to conserve space. Some reviews I've read complain about food sticking to stainless steel. I've not had this problem AT ALL PROVIDED I use the cookware according to manufacturer's directions. That is, heat the cookware first, then add the oil/fat. Only add the food after the oil is hot. Never use high heat except to boil water. (I find I never feel I need high heat with the heat-distributing properties of this cookware.) Slight discoloration on the interior of the pots that I get sometimes after cooking is very quickly polished away with Bar Keeper's Friend. The lovely shape of the Contemporary line adds a serendipidous advantage: the gradual curve of the bottom of the pots (curved like a saute pan) allow me to use a spatula more quickly and efficiently to stir and scrape out food. I really like this feature! Did Calphalon do it on purpose? I like the see-through lids. Eventhough the lids bead up with condensation, which limits how well you can see the food in the pot, I find I can readily monitor reaching the boiling point or the rate of boiling anyway. The set requires sharing a lid between the 8" saute pan and the 2 1/2 qt saucepan. Often I want to use both of these with lids simultaneously. Purchasing another lid would put me back about $40! So I sometimes just use the stockpot lid, which overhangs the edge of the saute pan.

I have had this set for over two years and I love it! And I have to say, in response to the other reviews, I don't buy Barkeeper's Friend (or anything similar), but I have no problem cleaning these pans - EVEN FOR EGGS. As long as you preheat correctly there is little sticking or cleanup, and a little soaking takes care of the times when the preheating wasn't done correctly (like, by my husband!). Just remember: "hot pan, cold oil, food won't stick!" These pans heat quickly and wonderfully evenly every time - I never have to turn my burner above medium. Not to mention, they are beautiful and ergonomically easy to handle. I have carpal tunnel syndrome but the construction of the handle and the way it joins to the pan makes it easy to lift and carry. Also, the way the handle joins to the pan (with a Y construction) ensures that it is a very solid join but conducts little heat, so the handle remains cool. Yes, the handle on top of the lid gets hot since it is directly over the heat, but that seems kind of obvious; just use a hot pad to lift the lid. Also, I have had none of the discoloration problems mentioned here; I'm not sure what might cause that, but whatever it is I apparently don't do it. I have also had NO problems with the pans denting and I do sometimes use metal spoons, though I prefer wooden. No, they don't look brand new any more, but really, who cares? They are extremely well-constructed and in two years of hard use (family of six) none of the joins or screws have loosened even a smidge, and no glass lids have broken. Plus, they are by far the most attractive pots and pans I've even seen, with lovely elegant lines. I like having them in my kitchen to look at as well as to use.

I bought the Calphalon Contemporary Stainless cookware 13 pieces set three months ago and wanted to give my thoughts. First of all I am a beginner cook and have only done simple things with the pans. I did my homework; I read various web sites on stainless cookware and how to care for it. I read all of the instructions that came with the pans. I checked out Calphalons web page as well. I have had no issues with sticking, none. First I warm up the pan slowly, and then I put a light layer of heart friendly oil in the pan. Clean up is a breeze, the trick BAR KEEPERS FRIEND. The pans still look as good as new. Use plastic and wood utensils with the pans, no metal. Mine came with a set of utensils, which I use every time. One reviewer damaged the pans by hitting a ladle against the rim, I have been careful not to "BANG" the ladle against the rim. And yes, the lid handles do get hot. Nothing negative to say, buy these. Did I mention BAR KEEPERS FRIEND?

This set was exactly what I was looking for - good value, good quality cookware in the shapes I want! This is a review after my first month.
Like everyone else, I compared this set to All-Clad very carefully. What swayed my mind was:
- the use of sauciers instead of saucepans
- similar quality at a better price
- perfect sizes for what I needed (the small covered saucier is so handy)
- stackable!
- great service from CIA, vs incorrect answers from All-clad distributor
Heating is very even. I've used the biggest pans on the smallest, largest & wok gas burners, always getting an even rise of bubbles as I approach boiling point. The clean up is easy, especially with a stainless cleaner which I've only used once. I've never been tempted to grab a wire scrubber yet, though I regularly pan roast and broil in these pans
I would change a few little things, but given the price, I can live with them (and I couldn't find a set with these at any price in clad):
- rolled edges on all pots (currently just on pans)
- the handle design, while comfortable, isn't the most stable on the stove when pans are near empty (more due to my gas stove which have 4 balance points). A little more weight in the body would be great, even though it felt the same as All-clad
- smooth cooking surface inside where handles mount (the rivets are the only part hard to clean)

I replaced my over rated all-clad stainless clad,cop-r-chef and ltd with this superior cookware. Forget the review about scratching or discoloring,they all do it. Use some Cameo to clean it. Cia has combined the best assests of them all into one. The handles are so comfortable, great fast even heating,induction ready and handsome styling.They continue to amaze me. I really don't care if it is made in China, price would be very high if made here.The profits go to the CIA cooking school.

Things I love about this cookware: The copper core makes it incredibly responsive. When I am making delicate sauces, or candy I can control the temperature up or down immediately (I do have a gas range, and I imagine it would take a little longer to respond on an electric stove, but so would any cookware). The weight is perfect. These pots are heavy enough to be really effective, without breaking my arm. Additionally the curve of the handle makes moving them on the stove, or carrying to the sink easy. I much preferred these curved handles over other handle choices from other vendors. The cooking surface on the skillets is really generous. Clean easily (I dishwash all the time).Handles resist heat transfer from the stove.There was a really great pamphlet included in the boxed set with tips on using stainless steel cookware that was put together by the chef's at the CIA. I have been cooking on good cookware for years and the tips included were still very helpful to me, especially about not cooking too hot. When you go from cooking on average cookware that doesn't hold heat to excellent cookware like this that does conduct heat so well - it's really easy to get your pan too hot. Lastly - GREAT VALUE! I couldn't be happier with the performance or the price.

I purchased the Cia master 10 Piece set and love it! I have used All Clad and other very expensive cookware in the past, and I have to say that the Cia collection beats them all by a long shot. I have used the cookware for a couple months now and have had no issues with scratching of the pans, or food sticking to the pans. I have used all sorts of utensils with my other cookware sets in the past and they have all scratched easily...not so with the Cia Masters Collection! It also washes up really great. I have told all of my friends to go out and get this cookware because it is so great. I will continue to purchase products from the CIA Masters Collection line.

We purchased the CIA Masters 10 piece set, plus the 12 inch frypan and a wooden spoon after researching the Viking and All Clad Copper Core sets. We were able to visit stores in our area to handle the Viking and All Clad sets before purchase - we were not able to see the CIA Masters set before purchase. In terms of weight, the CIA Masters set is similar in weight to the All Clad regular stainless set. The handles have two rivets and have the All Clad grove with the Viking curvature. The lids are slightly domed similar to the Viking set. In terms of the copper layer - we compared the CIA set against the All Clad Copper Core. If you look at a piece of All Clad Copper core you will see a copper layer that is about 1/8" thick and very easily identified. If you look at a piece of CIA Master cookware, the copper layer can hardly be seen. Given the price of copper these days, my guess is this amount of copper in the CIA cookware is part of the price difference to the All Clad Copper Core set. (10 piece set of CIA cookware is $499, 10 piece set of All Clad Copper Core $1200.) The set arrived from Metro Kitchen in three days and was beautifully packaged. So - why won't we recommend the set? First -you need to use silicon or wooden utensils with this set. Do not use metal utensils. The stainless steel is very very soft and the pans scratch easily. In fact, the very first time we used the set we made large, easily visible scratches on the outside bottom and inside just from making risotto. (note -- we have other stainless steel cookware where this is not a problem.) Second, the golden rule when using stainless is to use low to medium heat. Higher temperatures cause a reaction with stainless steel which cause a bluish / brownish stain. The first time we used one of the frypans this marking appeared despite the low heat we used. We haven't had any problems with food sticking (that pretty much a function of knowing how to cook in stainless anyway...) - but we can't honestly say the cookware is any better than the Emerilware or Cooks Essentials set we had previously. Frankly we wish we had not paid $500+ for cookware that is "just okay" and that is going to show wear in a very short time. The Viking or All Clad set would have been a better choice.
